Looking for Air Conditioning Solutions for a VW Caravelle 1986?

Adding a/c to a non a/c car is a major PITA. There were plenty of companies back in the 60's that made retro-fit kits to bring a/c in to cars that did not have it "factory Installed". There are other companies that may still make those style of kits, but the viability of that is questionable. You can try finding the same car in a wrecking yard and take out the controllers, wiring harness, refrigerant lines, (both hi-and-low), then you would need the compressor, mount brackets, condenser, evaporator, housing, and usually a 4 speed fan. If you have a water cooled engine, then you would need a new thermostat, and a larger core radiator, as well as a 2 speed electric radiator fan. This is about all that I can think of for a "factory" unit. There is also the possibility that you can get a self-contained unit that would mount on the top of the car as many RV's do, that is run by a 12Vdc or a 120 vac motor, but I would think that you would need to upgrade your alternator for that, if you have a "standard 65 amp Alt. as that is a good place to start.
